Githiga washing station is part of Kanyenya-ini Cooperative Society, officially created in 1972. Although Kenyan coffees are very popular for brewing single origin espresso among baristas and coffee geeks, achieving a fruity and complex cup without unpleasant and sharp acidity is not always easy. The elegant and bright acidity is highly valued in the best Kenyan coffees. It is the result of specific cultivar used on Kenyan farms (called SL 28 and SL 34), together with unique cherry processing based on prolonged double fermentation (up to 70 hours). Taming the acidity and keeping the vibrant fruitiness in the cup was the goal for roasting this wonderful Kenyan coffee.
